Ingredients

20 min prep + 50 min baking
10–12 servings
  • 4large eggs, at room temperature
  • 1 1/4 cupslight brown sugar (240 grams)
  • Zest of 1 orange
  • 1 teaspoonvanilla extract
  • 2/3 cupsunflower oil (155 grams) plus 1 tablespoon for greasing the pan
  • 2 1/2 cupsall-purpose flour (300 grams)
  • 1 packetbaking powder (about 2 1/2 teaspoons, 16 grams)
  • 1/2 cupGreek yogurt whey (110 grams)

  • Powdered sugar, as needed, for dusting

  • 1Bundt pan, 9.5-inch diameter (24 cm)
  • 1large mixing bowl
  • 1electric mixer
  • 1orange zester or grater
  • 1pastry brush
  • 1kitchen scale
  • Storage

Steps

20 min prep + 50 min baking

    Crack the eggs into a large bowl. Add the brown sugar and beat with an electric mixer for 4–5 minutes, until the mixture is pale and fluffy.

    Add the grated orange zest and vanilla extract. Mix on low speed for 1 minute.

    Slowly pour in the sunflower oil while continuing to beat on low speed.

    In a separate bowl, combine the flour and sifted baking powder. Add them to the egg mixture a little at a time, alternating with the Greek yogurt whey, beating on low speed. The batter should be smooth and creamy.

    Grease a 9.5-inch (24 cm) Bundt pan well with 1 tablespoon sunflower oil using a pastry brush. Pour the batter into the pan. Bake at 350°F (180°C) for about 50 minutes (baking time may vary depending on your oven). Check doneness with a toothpick. Remove from the oven, let cool, invert the pan to release the cake, and dust with powdered sugar.

    Do not open the oven during the first 35 minutes of baking.
