Ingredients

  1. 1/3 boxwhole wheat spaghetti pasta
  2. 1chicken breast
  3. Italian seasoning to taste
  4. 1/2lemon
  5. 2 clovesminced garlic
  6. 1 cupspinach
  7. 1/4 cuproasted red peppers chopped
  8. Salt, pepper and crushed red pepper to taste
  9. 2 tspbutter
  10. 1/2 cupshredded Parmesan cheese

Cooking Instructions

    In cast iron pan brown chicken breast in olive oil (season with Italian seasoning, salt and pepper)

  2. 2

    In saucepan cook whole wheat spaghetti Al dente and reserve 1/2 cup of pasta water

  3. 3

    After chicken is browned removed from pan and dice (set aside)

  4. 4

    In large frying pan sauté butter, garlic and crushed red peppers until fragrance released

  5. 5

    Add lemon juice and 1/2 cup pasta water and heat to boil

  6. 6

    Add spinach, roasted red peppers, chicken and pasta and mix in while cooking until liquid is absorbed

  7. 7

    Add Parmesan cheese and combine
