After trying numerous recipes; either under cooking or burning, I think I finally hacked the code. Millionaire Bacon, aka Candied Bacon, is a kid favorite and show stopper.

Ingredients

4-6 people
  1. 1-2 poundsthick cut bacon (deli thick)
  2. 1-2 cupsBrown Sugar
  3. 1-2 tablespoonschili powder of choice (Optional)

Cooking Instructions

    Preheat over to 375°.

  2. 2

    Line sided baking sheet with aluminum foil, the place bacon, so it is slightly overlapping. Sprinkle generously with brown sugar.

    Place bacon in preheated over for 12 minutes. After 12 minutes, remove bacon from oven, turn each piece but this time, the bacon will have shrunk so you can place two pieces along the edge and space out the rest of the bacon so it's not overlapping. Sprinkle generously with more brown sugar and place back in over for 12 minutes.

    After 12 minutes, pull the bacon from the oven. Turn up the heat in the oven to 410°. While oven heats up, turn the bacon and apply brown sugar again.

    If you want to add spice, apply during this step. I prefer cayenne or peri-peri powder.

    Pro Tip: If your bacon is cooking unevenly, move pieced around the baking sheet to even out each pieces doneness.

    Once the oven reaches 410°, put the bacon back in the oven for 5 minutes.

    Remove from oven, turn each piece, (move pieces to ensure even cooking), apply brown sugar (and pepper spice), and place back in oven for 5 minutes.

    While the bacon cooks in this final step, prepare wax paper or parchment paper to place finished bacon on.

    Remove bacon from oven and let stand for 2-3 minutes. Normally, I wait to see the sugar had stopped cooking. Immediately remove the finished bacon from the baking sheet and place it on prepared paper sheets.

    Let cool 3-5 minutes.
