Boil the meats (except the sausages) for 2 hours.

Skim off any foam that forms. As it boils, add salt to taste.

Meanwhile, make the meatballs: In a bowl, mix the ground meats with the egg, minced garlic (and parsley if you like), and the 3 tablespoons of breadcrumbs.

After 2 hours, leave the chicken in the pot and remove the other meats. At this point, add the vegetables except for the potatoes. Let simmer for about 1 more hour. If the water level gets low, add more boiling water as needed.

20 minutes before serving, add the meatballs and potatoes separately. Reserve some broth to cook the pasta in a separate pot (you can use galets, rice, or noodles).

A few minutes before serving, add the chickpeas.

Serve the soup with the pasta, and serve the meats and vegetables separately on another platter.
