Ingredients

10-12 servings
  • Meats
  • 1chicken leg quarter
  • 1pig's foot (split in half)
  • 2ham bones
  • 2beef bones
  • 2 piecesbeef
  • 1blood sausage (morcilla or black pudding)
  • 1white sausage (butifarra blanca)
  • 1-2 piecesham (depending on how salty you want it)
  • You can add pork belly if you want it richer
  • Vegetables
  • 1 headcabbage
  • 4carrots
  • 4potatoes, cut into large pieces
  • 2turnips
  • 2leeks
  • 1whole celery stalk
  • 2parsnips
  • 2 cupscooked chickpeas (about 300 grams)
  • Meatballs
  • 1 clovegarlic, minced
  • 9 ozground pork (about 250 grams)
  • 4 ozground beef (about 120 grams)
  • 3 tablespoonsbreadcrumbs
  • Flour
  • 1egg

Steps

  1. 1

    Boil the meats (except the sausages) for 2 hours.

    Skim off any foam that forms. As it boils, add salt to taste.

  3. 3

    Meanwhile, make the meatballs: In a bowl, mix the ground meats with the egg, minced garlic (and parsley if you like), and the 3 tablespoons of breadcrumbs.

    After 2 hours, leave the chicken in the pot and remove the other meats. At this point, add the vegetables except for the potatoes. Let simmer for about 1 more hour. If the water level gets low, add more boiling water as needed.

  5. 5

    20 minutes before serving, add the meatballs and potatoes separately. Reserve some broth to cook the pasta in a separate pot (you can use galets, rice, or noodles).

  6. 6

    A few minutes before serving, add the chickpeas.

  7. 7

    Serve the soup with the pasta, and serve the meats and vegetables separately on another platter.
