To begin, clean and wash the methi. Keep all the ingredients handy. Heat 1 tablespoon of oil in a pan. Add in the chopped onions, both cardamoms, ginger, garlic, bay leaf, cloves, peppercorns, cinnamon, cashewnuts, one tomato and saute for about 2-3 minutes. Let cool and then blend into a smooth paste.

In the same pan, add oil and cumin seeds. After a few seconds, add the blended paste and saute for about 4-5 minutes until it's roasted well. Now add roughly chopped methi or fenugreek greens and green peas. Saute for a minute. And add all the powdered spices as mentioned. And finally the paneer cubes too.

Let it cook for a while until done. Adjust salt. It's almost ready in no time at all.

Finally, add the cream and the garam masala powder. Keeping the heat on a low, cook some more. Make sure you don’t boil the gravy after adding the cream or it might curdle. Garnish with chopped coriander leaves and kasuri methi.

That's it. Serve this luscious methi matar malai paneer alongside both rotis and rice. It goes well with any indian bread and even pulao, cumin rice, puris, parathas, naans etc. Enjoy
