Cooking Instructions
- 1
Quarter tomatoes lengthwise, trim off hard tips. Boil till tomato quarters release their juices, about half an hour.
- 2
Run through fine disc in foodmill to remove skins and seeds
- 3
Put puree back in pan, add 1 teaspoon of flaked seasalt, simmer till thick, about an hour.
- 4
Spread puree on baking sheet, place in 200F degree air fryer oven with convection fan on, stir with spatula every 20 minutes. Bake 4 hours. To establish your preferred salt level of the concentrated paste, dissolve one teaspoon in a cup of boiling water, should taste like fresh tomato juice. Compare with a teaspoon of Cento paste in a cup of boiling water, which is called double concentrated because it contains four times more salt than this recipe.
- 5
Press paste in mason jar. Make sure there are no airpockets. Keep covered with olive oil. Fresh for a year in the fridge. Remove one teaspoonful at a time, smooth out so olive oil layer keeps air from coming in contact with tomato paste.
- 6
Taste test monthly against Cento tube tomato paste for freshness. Home made stays fresh for a year.

California Farm Sun Dried Tomato Paste California Farm Sun Dried Tomato Paste
When you sun dry red ripe tomato puree for four days, you get superb tomato paste. If you dont get four continuous days of sun this time of year, dry in oven. No other ingredients added except a teaspoon of seasalt per pint, just dried into paste in the sun on a half size baking pan. Fresh frozen in small quantities, I use empty half eggshells, holding one ounce each, not boiled or canned to keep that summer fresh taste. Hobby Horseman -

California Farm Annual Tomato Harvest California Farm Annual Tomato Harvest
Before the first night frost comes in November, time to process all the garden tomatoes, ripe or not. A pound of tomatoes make a pint of puree. A tablespoon of apple cider vinegar per pint keeps botulism out. The green tomatoes take longer to peel, then are cored, roasted, pureed and simmered. The red hard ones and red ripe soft ones are peeled, cored, pureed, then roasted and simmered. The over ripe ones are washed, quartered and sundried and stored in olive oil. We expect the next tomato harvest in June, 32 weeks from now, so I freeze 64 pints of puree, the basis for tomato soup, tomato sauces, tomato paste, salsa verde, and ketchup. They take little space in the freezer when stored in quart bags laid flat and frozen. Hobby Horseman -
