A short puree cook, a long puree bake, delicious organic Roma Tomato paste, just tomato, flaked seasalt and olive oil. No other preservatives used, kept fresh for a year refrigerated in a sterilized mason jar. Ten pounds of fresh Roma tomatoes make one pound of paste. To start, make quarter pound batches with 2 1/2 pounds of fresh tomatoes till you have perfected the flavor.

Ingredients

  1. 2 1/2 poundscored organic roma tomatoes, unpeeled, quartered lengthwise, cored
  2. 1-3 Tspflaked seaSalt
  3. 2 Tbsextra virgin organic olive oil
  4. See also sundried tomato paste
  5. Equipment: handheld food mill, deep pan with lid, oven baking tray, air fryer oven, sterilized mason jar with lid
  6. Cost: farm free in season, $2/pound at the farmers market in season, $4/pound in winter, salt and olive oil under $1

Cooking Instructions

    Quarter tomatoes lengthwise, trim off hard tips. Boil till tomato quarters release their juices, about half an hour.

    Run through fine disc in foodmill to remove skins and seeds

    Put puree back in pan, add 1 teaspoon of flaked seasalt, simmer till thick, about an hour.

    Spread puree on baking sheet, place in 200F degree air fryer oven with convection fan on, stir with spatula every 20 minutes. Bake 4 hours. To establish your preferred salt level of the concentrated paste, dissolve one teaspoon in a cup of boiling water, should taste like fresh tomato juice. Compare with a teaspoon of Cento paste in a cup of boiling water, which is called double concentrated because it contains four times more salt than this recipe.

    Press paste in mason jar. Make sure there are no airpockets. Keep covered with olive oil. Fresh for a year in the fridge. Remove one teaspoonful at a time, smooth out so olive oil layer keeps air from coming in contact with tomato paste.

    Taste test monthly against Cento tube tomato paste for freshness. Home made stays fresh for a year.
