  3. 7 gSugar
  4. 2 gDry yeast
  5. 10 mlOlive oil
  6. 200 gBread flour
  7. 5 gSalt
  8. Sauce
  9. 4Tomatoes
  10. 2 TbspTomato sauce
  11. 1Bell pepper
  12. 1/2Onion
  13. 1 TbspMinced garlic
  14. 1 tspBasil powder
  15. 1/2 TbspBalsamic vinegar
  16. Topping
  17. Mozzarella cheese
  18. leavesBasil

    Dough

    Dissolve the sugar in lukewarm water.

  3. 3

    Add the yeast, stir gently, and let it rest for about 10 minutes.

    Stir in the olive oil.

  5. 5

    Mix the flour with salt, coating it evenly.

  6. 6

    Gradually pour in the yeast mixture and fold with a spatula until a soft dough forms.

  7. 7

    Lightly coat with olive oil, cover with plastic wrap, and let it cold-ferment in the refrigerator for 24 hours.

    Take out the dough, dust with flour, and knead lightly.

    Cover again with plastic wrap and allow a second rise for 30 minutes.

    Sauce

    Finely chop the onion.

    Dice the bell pepper into similar small pieces.

  13. 13

    Score the tomatoes with a cross cut.

    Boil the tomatoes for 2 minutes, then transfer to ice water and peel. Chop finely.

    In a pan, sauté the onion, bell pepper, garlic, tomatoes, tomato sauce, basil powder, and balsamic vinegar over medium heat until thickened.

    After 30 minutes, take one portion of dough and press gently from the center outward, leaving the edges untouched to form the crust.

    Place the dough in a dry skillet and spread the tomato sauce over the center.

    Cook over high heat for 1–2 minutes until the base begins to puff and brown.

    Transfer to a preheated oven at 250 °C (480 °F), top with fresh mozzarella, and bake for 8 minutes until golden and bubbling.

    Finish with fresh basil leaves on top.
