Spam Basil Rice with Fried Egg

This is like "Thai Pork Basil Rice", however I used spam and tofu instead, so you can be lazy as you don't need to add any seasoning while cooking! Also by adding tofu, it helps reduce the salty taste of Spam as well as bulking up the amount in a more healthy way. This will make your family stuffed!

  1. 1 canSpam less salt (350g)
  2. 150 gtofu
  3. 1onion
  4. Leavesfrom 1 stalk celery
  5. 1 tspgrated ginger, optional
  6. 2 tspolive oil

    Put the Spam into a bowl and mash with a wooden spatula.

    Then add tofu (if you have enough time in advance, wrap the tofu with kitchen paper and leave to soak up the water from the tofu for half an hour). Keep mashing everything into small pieces.

    Chop the onion and celery leaves into small pieces. Add all into the bowl with the ginger and keep mixing.

    Heat olive oil in a frying pan, then add the mixture to fry until it becomes a nice crispy golden-brown colour. Make sure you fry enough so that all water has evaporated from the tofu.

    Put cooked rice on a plate, add the cooked Spam and fried egg and finally garnish the rice with some basil. Enjoy your meal :)
