Ingredients

3 servings
  1. For Rice Layer-
  2. 2 cupcooked Basmati Rice (80% cooked in added 1 cardamom, 1 clove,1 bay leaf, 1 teaspoon ghee,salt)
  3. For Birista
  4. 2 tablespoonsoil
  5. 2big size onion
  6. For marination
  7. 1 cupcurd
  8. 2 tbspginger garlic paste
  9. 1chilli, chopped
  10. 2 tsplemon juice
  11. 2 tspoil
  12. 1/2 tspturmeric
  13. 1 tspchilli powder
  14. 1 tspcoriander powder
  15. 2 tbspgaram masala/ Biryani Masala
  16. 1 tspsalt
  17. 2 cupchopped mix vegetables (potato,cauliflower, carrot, green peas)
  18. For assemble Biryani
  19. 2 tbspghee
  20. 2 tbspoil
  21. 1/4 teaspooncumin seeds
  22. 1bay leaf, 1 cinnamon, 1 cardamom,3 clove
  23. fried onion
  24. 2 tablespoonsfried cashew
  25. 7-8mint leaves
  26. 1 tablespooncoriander leaves
  27. 1/2 cupsaffron milk
  28. 1 tspbiryani masala
  29. 1 tspghee

Steps

  1. 1

    First of all Thinly slice onions and fry them in oil till golden and crisp. Set these aside half of this. Fry the cashew and keep it aside.

    In the same pan add the chopped veggies. Furthermore, add the prepared marination curd mixture and mix well.

    Cover and cook for 10 minutes, or until the vegetables are cooked almost. Keep aside.

    Now heat ghee and oil in a clay pot. Add cumin seeds and whole spices. Allow to crackle them.now assemble first Layer the gravity based vegetable. Next layer is rice over the vegetable mix. Then layer the 1/3 cooked vegetable mix or 2 pinches of masala powder. Sprinkle some fried onions mint and coriander.

    Layer rice over it again, then the fried onions, mint and coriander leaves and pour off the saffron milk. Fry nuts in a tbsp ghee over the rice.make dough made of wheat flour. Moisten the rim of the pan, place this dough around the rim and place the lid over it.

    You can use a foil to seal the pot.Place the dum utensil on a hot tawa and cook for 5 minutes on a medium flame and then on low for 5 to 7 minutes based on the thickness of your utensil.

    Finally, enjoy Veg Dum Biryani with raita.
