Set a large pot on medium heat, and add oil and the onions. Stir till golden but not burnt.

Add capsicum, stir once, and immediately add potatoes and Carrots. Stir till the edges of the potatoes begging to turn translucent.

Add spices, stir for two minutes.

Add tomato puree and cook on medium high heat for another 2 minutes.

Add peas and green maize, stir to combine, cover, and allow to simmer till tomato is cooked. Add hot water as desired to prevent drying.

Once thickened, add grated zucchini, stir, cover, and lower heat. Let cook for 2 minutes.

Serve hot.
Can be served with cabbage.
