Ingredients

6 servings
  1. 2 lbsvenison (back straps if you’ve got em’)
  2. 1 qtwhole buttermilk
  3. 2 cupsflour
  4. Cajun seasoning of season all (to taste)
  5. Salt (to taste)
  6. Black pepper (to taste)
  7. Paprika (to taste)
  8. Garlic powder (to taste)
  9. Oil for frying

Cooking Instructions

  1. 1

Trim, cut, and tenderize venison. I run mine through and meat tenderizer/cuber. You can do it with a meat tenderizer mallet.

  2. 2

    Soak meat in buttermilk overnight.

  3. 3

Mix together flour and seasonings. You can season your flour however you’d like. I listed that seasonings I add to mine.

  4. 4

Remove venison from buttermilk and coat in flour mixture one at a time. Lay them out on a baking sheet. Put them back in the refrigerator for 15-20 minutes to let the batter set.

  5. 5

Heat oil in a heavy skillet for frying. Once hot, add steaks to oil working in batches of 2-3 at a time. Cook on each side till golden brown. Set aside on paper towel to absorb the oil.

  6. 6

Serve with country gravy and enjoy!
