Cheesy Ham & Tater Soup

When you get a hankering for some creamy cheesy soup, and there’s record breaking snow everywhere. You improvise with the ingredients on hand.

Ingredients

1 hourish
4 servings
  1. 4cubed cooked potatoes
  2. 1 (18 oz)carton chicken broth
  3. 3 cupschopped ham
  4. 2 clovesgarlic, minced
  5. Salt and Pepper to taste
  6. 1-2 cupsinstant potato flakes
  7. 1 (8 oz)cream cheese
  8. 1 (16 oz)sour cream & onion dip
  9. 1 (8 oz)shredded cheddar cheese
  10. 1 (8 oz)white queso

Cooking Instructions

1 hourish
  1. 1

    Mash half the potatoes, set aside.
    Bring broth to boil in stock pot, whisk in queso, sour cream dip & cream cheese until smooth. Whisk in potato flakes. Reduce heat to medium simmer.

    Stir in garlic, ham and potatoes. Simmer 15 minutes. TASTE! Add salt and pepper if desired or any other seasoning if needed.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
