Ingredients

Makes about 30 pieces
  1. 250 gground pork
  2. 150 gcabbage or napa cabbage
  3. 1/2 tspsalt
  4. 1/2 bunchchives
  5. 1/2 stalkgreen onion
  6. Seasoning A
  7. 2 tspgrated ginger
  8. 1 clovegarlic, grated
  9. 1 tspsoy sauce
  10. 1 tbspsake
  11. 1 tbspsesame oil
  12. 1 tbspoyster sauce
  13. 1/2 tspsalt and pepper
  14. 2 tspsugar
  15. 1 tspchicken bouillon powder
  16. 2 tspcornstarch
  17. For Cooking
  18. 1/2 cupboiling water (100 ml)
  19. 1 tbspvegetable oil
  20. 1 tspsesame oil
  21. Gyoza Sauce
  22. 1 tbspsoy sauce
  23. 1 tbspvinegar
  24. 1 tbspchili oil

Steps

    Put the ground pork in a bag, add all the Seasoning A ingredients, and knead well until sticky.

    Finely chop the cabbage, put it in the bag, sprinkle with salt, and let it sit for about 10 minutes.

    Cut a hole in the corner of the bag with scissors and squeeze out the excess water.

    Finely chop the chives and green onion.

    Add the cabbage from step 3 and the chives and green onion from step 4 to the bag from step 1, and knead well. *If possible, let it rest for about half a day to let the flavors meld.

    Moisten a paper towel.

    Dampen half of the gyoza wrapper with the paper towel.

    Cut the corner of the bag from step 5 with scissors.

    Squeeze the filling into the center of the wrapper and cut with a fork or spoon.

    Bring the center together.

    Pinch the edges to seal.

    Shape the gyoza.

    Sprinkle cornstarch on a tray and arrange the gyoza.

    Prepare 1/2 cup boiling water (100 ml), heat a frying pan over medium heat, add oil, and arrange the gyoza. Cook for about 1 minute to brown.

    Mix the sauce ingredients together.
