Aloo Paratha is a popular North Indian flatbread stuffed with a spiced potato filling. It's a comforting and hearty dish, often enjoyed as a breakfast or main meal.

Steps

Take a pressure cooker and add 4-5 potatoes.
Add enough water to submerge the potatoes.
Cook for 1 whistle on high flame, then lower the flame and cook for 2 more whistles.
Turn off the heat and let the pressure release naturally.

Take a pan and heat some oil on low flame.
Add cumin seeds, minced garlic, and chili paste.
Sauté for 30-40 seconds until fragrant.
Add finely chopped onions and cook until they turn slightly golden.

Add the boiled and mashed potatoes to the pan.
Mix well and add your spices (e.g., salt, turmeric, red chili powder, garam masala, or any preferred spices).. Toss in freshly chopped coriander and mix everything thoroughly.

Take a mixing bowl or pan and add whole wheat flour, a pinch of salt, a little oil, and crushed cardamom (optional for flavor).
Gradually add water and knead the mixture into a soft and smooth dough.
Cover the dough with a damp cloth and let it rest for 30 minutes to 1 hour.

Take a small portion of the prepared dough and roll it into a ball.
Dust some wheat flour on a rolling surface and roll the dough into a small circle.
Place a spoonful of the stuffing in the center of the rolled dough.
Bring the edges of the dough together to seal the stuffing completely, forming a pouch.

Heat a pan or tawa on medium flame.
Place the rolled paratha on the hot pan.
Cook one side for a few seconds until light spots appear, then flip it.
Spread some ghee on the cooked side and flip again.
Apply ghee on the other side as well and cook until both sides are golden brown and crisp.

Ready aloo paratha with chutney pickle curd.....
