This is Khagina or Egg Bhurji with freshly chopped Onion Flower Stalks as an innovative twist by me. With this amazing Greens, I had given it an interesting twist for a change on a weekend Morning for Breakfast. The best part is that it can be whipped up in just a few minutes and suits the busy morning hour rush and hence comes as a boon to all the mothers and especially the working mothers on the week days. This is similar to Scrambled Eggs which is an all time favourite dish of many a people around the World. This is infact Desi style of Scrambled Eggs that's so very easy to whip up on any given day. Enjoy your meals with this super easy dish. Not only for Breakfast, this can be enjoyed with Phulkas at Lunch and Dinner both.
Onion Flower Stalk adds that flavour as well as a beautiful colour or lustre to the dish. And the taste and texture was just amazing. A perfect Breakfast idea on any day especially the Weekends for all. A great option for Lunchbox too.

Heat oil in a pan. Now add the chopped onion flower stalk along with ginger garlic paste and the green chillies too if using. Saute for a while before adding eggs.

After about 2-3 minutes, add eggs and the rest of the ingredients as mentioned. Adjust them according to one's own liking. Break the eggs into it and swiftly keep stirring in one direction. Do it on a low heat.

Now cover and leave it for about 4-5 minutes so that the flavours infuse really well. It doesn't take more than 10 minutes. The whole time mentioned in the title is the overall time to get things ready. That's it.

Garnish with lots of coriander leaves and serve hot with Chapatis or even Parathas. And can also be added to Subways, Frankies, Wraps, Rolls and Burgers. The options are endless. Enjoy!
