Struffoli

This is a classic Neapolitan Christmas dessert: small balls of fried dough coated in honey, candied fruit, and colorful sprinkles. That’s the basic idea, but there are many little stories behind struffoli. Do you know why they should be small and round? Or why it’s important to use plenty of honey? And what do the silver dragées used for decoration represent? Let’s discover some fun facts about struffoli. Tradition says they should be generously decorated with honey and candied fruit, especially citron, orange, and pumpkin. Colorful and silver sprinkles, known as 'diavulilli,' should also be used in abundance. This isn’t just for taste and color, but also because they are said to symbolize wealth and prosperity. Sometimes, chocolate coins are added as well.

Steps
- 1
Prepare the ingredients. Start by placing the flour on your work surface.
- 2
Make a well in the center and add the salt and sugar.
- 3
Add the butter, flavorings, and eggs. Begin to mix the dough.
- 4
Gather the flour and knead, then add the anise liqueur.
- 5
Knead until you have a smooth dough. Cover and let rest for 30 minutes. Then cut the dough into pieces and roll into ropes.
- 6
Cut the ropes into small pieces using a bench scraper and dust with flour.
- 7
To prevent sticking, heat high-oleic sunflower oil in a frying pan. Place the struffoli in a sieve to remove excess flour, and when the oil is hot, they’re ready to fry.
- 8
Add the struffoli to the oil, cover, and fry for 3 minutes over medium-low heat, stirring occasionally. Drain and set aside.
- 9
After frying, heat the honey with the flavorings in a pan until it boils. Turn off the heat, add the struffoli, and mix well. Transfer to a serving plate or into muffin liners for mini portions.
- 10
Decorate with colorful sprinkles, candied orange peel, and assorted candied fruit. They’ll disappear fast!
