Soak the ribs in cold water for 30 minutes to remove the blood, then cut the ribs into pieces.

Add all the marinade ingredients to the cut ribs and marinate overnight (at least 1 hour).

Coat the ribs with sweet potato starch, then return them to the marinade bowl and mix to let the starch absorb moisture.

Prepare the frying oil by adding the green onion sections, chili peppers, and garlic cloves. Fry until slightly browned, then remove to enhance the oil's aroma.

When the oil temperature reaches 300°F (150°C), gently add the ribs and fry for 4 minutes, then remove (do not stir initially; wait until the batter sets before turning).

Increase the oil temperature to 340-355°F (170-180°C), then return the ribs to the oil for a quick fry (20-30 seconds) to make the coating extra crispy. Sprinkle with pepper salt, and your fragrant fried pork ribs are ready!
