Goat Cheese and Honey Stuffed Ravioli

  1. For the dough:
  2. 4eggs
  3. 3 1/3 cupsbread flour (about 400 grams)
  4. Splashwater
  5. Salt
  6. For the filling:
  7. Goat cheese (about 3/4 inch of a log)
  8. 1 splashhoney to taste

    For the dough, put everything in a bowl and knead until fully combined.

    Set the dough aside and prepare the filling on a plate. Use a fork to mash the cheese, then add the honey and mix well.

    Set the filling aside. Take the dough and divide it into two parts. Roll each part out as thin as possible. On one of the sheets, use a teaspoon to place small balls of filling, leaving about 2 inches between each ball.

    Once done, place the other sheet of dough on top and cut into squares. Trim the excess dough from the edges and use a fork to seal the sides.

    Sprinkle flour on a plate to prevent sticking.

    Boil water, and once boiling, add the ravioli. Wait for them to float, then cook for 3 more minutes before removing.
