Koorka or Chinese Potatoes origins can be traced back to central and East Africa from where it migrated to India, Srilanka, Malaysia and Indonesia. It's actually a hairy tuber that looks much similar to Colocasia or Arbi but doesn't have that slimy feel. It also doesn't make your hands itch. It's a Winter root Vegetable and has a dense texture with a muddy outer skin.
The fun fact is that it is known as Chinese Potato but is neither a Potato nor is it from China. It is also known by other names like Coleus/ Fra-Fra/Hausa/Madagascar Potato.
It is rich in Calcium, Iron and Vitamins. It can help with digestion and weight loss. The antioxidant content in it helps boost immunity and protect against chronic diseases. They are low in Calories and high in Fiber, Vitamins and Minerals. Overall a perfect choice for any day. It can be a complete meal in itself or a special starter dish as well.

Wash the potatoes and boil them for about 6-7 minutes on a medium high heat or pressure cook whichever is convenient. Set aside to cool. Later peel them and cut into two halves. Or if they are very small, leave them as it is.

In a pan, heat oil and saute the sliced onions at first until slightly browned. Next is to add the chinese potatoes or koorka. Add the powdered spices too. Mix well and stir fry them on a low to medium high heat for the next 5-6 minutes. That's it.

Adjust the spices if needed. Garnish with freshly chopped coriander leaves and garam masala. Serve it piping hot right away as a snack or a special brunch on a weekend or even at mealtimes.
