February, the coldest month... and you always want something to snack on. I adapted this recipe from my mother to make it a bit healthier and easier, since the final result is baked in the oven!

Bring all your ingredients to room temperature.

In the bowl of a mixer, add the flours and mix with a whisk. Make a well in the center and add the remaining ingredients, except the salt. Attach the dough hook and knead until you have a smooth dough ball. Add the salt during kneading. You may need a little more water, so add it gradually as needed.

Once the dough is ready, cover it with plastic wrap to keep it from drying out and let it rise for 1 hour in a warm place. I like to preheat the oven slightly, then turn it off and place the dough inside (make sure the oven is not hot!).

When the dough has risen, use a scale to weigh out 1.4 ounces (40 grams) of dough for each piece. Roll each piece into an oval, place a sausage inside, and seal the edges well. Place all the piroshki on a baking sheet lined with parchment paper and bake at 365°F (180°C) for about 20 minutes, until golden brown.

Serve warm or cold with mustard or any dip you like! Enjoy!
