We have substituted rice with quinoa to make this quinoa pulao.

Rinse the quinoa with water. Soak it in water for 1 hour.

Chop the carrot, cabbage, beans, and onion. Rinse the peas and all the vegetables with water.

Heat ghee in a pan. Add cumin seeds and mustard seeds and let them splutter. Add cloves, star anise, bay leaf, and cardamom, and stir. Add the chopped onion and sauté until golden.

Once the onion is sautéed, add all the vegetables and sauté lightly. Add the soaked quinoa and mix well.

Add salt, red chili powder, turmeric powder, and garam masala powder. Mix well. Add 3 cups water (about 710 ml) and stir.

Cover and cook for 15-20 minutes. Check if the quinoa pulao is done.

Lightly roast the cashews and raisins. The quinoa pulao is ready. Transfer to a bowl.

Garnish with cashews, raisins, and chopped cilantro before serving. Serve with yogurt, papad, pickle, and salad.
