  2. 1/2 teaspoonsalt
  3. 1 tspginger garlic paste
  4. 1 tspghee or oil
  5. as neededWarm water,

    Mix dry ingredients : In a large mixing bowl, combine sorghum flour, salt, and ginger garlic paste (if using).

    Add ghee or oil: Add the ghee or oil to the flour mixture and mix well.

    Gradually add water: Gradually add warm water to the flour mixture and knead the dough for 5-7 minutes, until it becomes smooth and pliable.

    Rest the dough: Cover the dough with a damp cloth and let it rest for 5-10 minutes.

    Divide the dough: Divide the dough into 6-8 equal portions.

    Roll out the dough: Roll out each portion into a thin circle, about 6-7 inches in diameter.

    Cook the roti: Heat a non-stick skillet or tawa over medium heat. Cook the roti for 1-2 minutes on each side, until it's golden brown and puffed up.

    Tips*
    - Use a cast iron skillet or a non-stick tawa to cook the roti.
    - Adjust the amount of water according to the humidity and the type of sorghum flour used.
    - You can also add a pinch of baking soda to the dough to make the roti softer.
    - Sorghum flour roti is a good option for people with gluten intolerance or celiac disease.
