Firstly soak tamarind, dates and jaggery in seprate bowls for 2 hours. Take out all the seeds from dates then soak it. After 2 hours dates and tamarind will be soft and jaggery will dissolve. Now with a spoon mash the dates it will be somewhere completely mashed and somewhere little chunks will be there. And these chunks when will be cooked with tamarind pulp will dissolve more but if you don't want chunks in your chutney then simply grind it in the mixer grinder to a fine paste.

Now time to take out the tamarind pulp for that mash the soaked tamarind by your hand and strain through a seive then again add water to the tamarind mash it and seive again. Like so add water and mash 4-5 times to take out all the pulp and discard the seeds and impurities. Now seive the pulp again directly in a deep pan in which you will cook the chutney. Now seive the jaggery syrup also. Make sure to seive jaggery syrup and tamarind pulp because both have many impurities in it.

Now add sugar to the tamarind pulp then all the above-mentioned spices and food colour to it and mix it very well. Put the pan on the gas stove on high flame and allow it to boil. Once start to boil cook for 2 more minutes then add the mashed dates to it. Mix it very well and boil again. Flame is on high till this point. Lower the flame when it reduces 20%. Then add white vinegar to it mix it and let it boil again. Dry roast the sesame seeds till the point it puffs up a bit and changes colour.

Now cook it on medium flame stirring in between and cook it till it reduces 40%. It will take somewhere around 1 hour to be completely done. Taste it and adjust the flavours if needed. Don't make it too thick because it will get more thick once cool down completely. Off the flame when it's on a flowing consistency. Then allow it to cool down completely. Once cool down then keep it in a neat, clean and dry bottle and keep it in the refrigerator. Everytime use neat and clean spoon to take it out.

Don't ever put your hand in it else it will be rotten. Keep these few things in mind and your chutney will last for a whole year. Your can adjust the consistency as per your like.
