Preheat oven to 350°F (175°C). Line a muffin tray with cupcake liners.

Sift dry ingredients together in a bowl (flour, cocoa powder, baking powder, baking soda, salt).

In another bowl, whisk wet ingredients: buttermilk, oil, sugar, vanilla extract

Combine dry and wet ingredients, folding gently until just mixed. Do not overmix.

Fill liners 34 full and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.

For Cream Cheese Frosting (Optional)
• 1/2 cup (115g) butter, softened
• 8 oz (225g) cream cheese, softened
• 2 cups (250g) powdered sugar
• 1 tsp vanilla extract
1. Beat butter and cream cheese until smooth.
2. Add powdered sugar gradually and beat until fluffy.
3. Pipe onto cooled cupcakes.
