Pour the oil over the couscous and mix well so each grain is coated. Add the boiling water and let the mixture sit for about a minute or less. Fluff the couscous so the grains separate.
Steam the couscous until it is well cooked.
Transfer to a large bowl, add the salt, and gradually add the room temperature water until the couscous is soft but fluffy. Let it rest until completely cool. - 2
Add the sugar, oil, and the butter used to roast the almonds.

Place the raisins in the steamer and steam for the second time.
Transfer the couscous to the bowl, add the butter, and mix well until the butter is fully melted. - 4
Add the orange blossom water, then the nuts, and mix well so the nuts are evenly distributed with the couscous.

Garnish as desired. Enjoy!
