There is a special pan in Northern Europe to make mini pancakes. It makes 14 at a time. Tradition is that children sing a song that counts the pancakes as they get the pancakes served.

If you do not have this pancake pan, you can make mini pancakes in a regular cast iron skillet with thicker mini pancake batter.

Both recipes are in here. The mini pancakes are called Puffs in local languages, sprinkled with powdered sugar and cinnamon mix. The puff comes from the baking powder in the batter, it makes for lighter pancakes.

Ingredients

Half hour
4 people, 126 mini pancakes
  • 2 Tbsor more warm honey
  • 2 Tbsor more brown sugar
  • 4 Tbsunsalted molten butter
  • 2fresh farm eggs, room temperature
  • 2 cupsor 1 cup warm full milk
  • 1 cupall purpose flour
  • 1 cupbread flour
  • 2 Tspbaking powder
  • 1/2 Tspflaked seasalt
  • 2 Tbspowdered sugar
  • 1 Tbscinnamon powder
  • Equipment: whisk, brush, spoon, mini pancake pan or large cast iron skillet, flexible plastic bottle with spout, spatula or 2 bamboo skewers
  • Cost: eggs 80 cents, butter 30 cents, milk 30 cents, honey 50 cents, sugars, other 50 cents, flour, other 30 cents, per person 67 cents

  1. 1

    Whisk a test batch of thin batter with dry ingredients, then eggs, butter, honey, then two cups of milk. Rest the batter. Heat the pan. Bake one mini pancake golden on one side in one minute in a low heat pan in molten butter. Add more sugar plus honey to the batter if the pancake is not golden in one minute.

    Bake 14 mini pancakes brown in one minute on a drop of molten butter, then flip and bake one to two minutes till puffed up and done on the other side

    If you use a regular skillet, whisk a test batch of thick batter made with the quantities of dry ingredients listed here, then eggs, butter, sugar, honey, then one cup of milk instead of two.

    Bake one teaspoon of batter two minutes, flip with two bamboo skewers, bake other side two minutes.

    Sprinkle with the cinnamon powder. Top with powdered sugar. Serve or freeze. Enjoy.
