In a large pot, add water and bring to a boil over high heat. Add the meats (except the pork foot, which will be cooked separately in a pressure cooker) so they can start cooking. I used frozen meat, so adding it first lets it thaw while you prepare the other ingredients.

Place the pork foot in a pressure cooker with water only (since it’s already salted) and cook for 30 minutes after it reaches pressure. (I had previously kept the pork foot in salt for 24 hours in a closed container in the fridge, then washed and froze it to have it ready for cooking.) Once done, transfer the pork foot to the main pot to finish cooking with the other ingredients.

Meanwhile, wash and cut the green beans, then add them to the pot along with a pinch of salt.

Peel and wash the potatoes, then add them whole to the pot. Add more water, leaving about 2 inches (3-4 fingers) from the top for the remaining ingredients.

When the water starts to boil, skim off any fat with a large spoon.

Cover the pot once it starts boiling and reduce the heat, but keep it simmering. Cook for 1 hour and 15 minutes. Add a little more salt if needed.

When the pressure cooker is done, release the pressure, open it, and transfer the pork foot pieces to the main pot.

About 15-20 minutes before the end of cooking, add the chickpeas in a mesh bag so you can easily remove them all at once when finished.

Once cooking is complete, the broth will be ready.

You can use a ladle or small pot to take some broth and cook noodles or alphabet pasta to serve as a soup. Enjoy!
