1. Wash and dry the Thai basil leaves and set aside.
2. Mince the garlic and set aside.
3. Mince the ginger and set aside.
4. Prepare the seasonings in advance. - 2
1. Place the chicken skin-side down in the pan first. As it heats, the fat will render out (or you can add oil directly).
2. Add the minced garlic and ginger, and sauté until fragrant.
3. When you smell the aroma, add the chicken, skin-side down, and sear. - 3
1. Sear the chicken until both sides are golden brown, then add the seasonings. Cover the pan and let it simmer.
2. When the sauce has reduced a bit, add the Thai basil, cover, and cook for another 3 minutes. Then it’s ready to serve.
