Steps

Chopped the beetroot :- Peel and chop the beetroot into small pieces.
In a large jar, combine the chopped beetroot, hot water, mustard seeds, cumin seeds, salt, black pepper, kala namak, and red chili powder. - 2
Mix well.
Add sugar (optional) If desired, add 1 tablespoon of sugar to balance the flavor - 3
Cover and ferment: Cover the jar with a lid and let it ferment in sunlight for 2 days.

Strain and serve : After 2 days, strain the kanji and discard the solids.

Serve the Beetroot Kanji, chilled or at room temperature.

Tips:- Use a large jar with a wide mouth to allow for easy mixing and fermentation.
- Adjust the amount of spices to your taste.
- If you prefer a sweeter kanji, add more sugar to taste.
- Beetroot Kanji is a probiotic drink that aids digestion and boosts immunity
