Shake shake shake!! One of my favorite Vietnamese rice dishes and it's easier to make than you think!
Cooking Instructions

Mix beef with its ingredients (except for the cornstarch) and let it marinate in the fridge for at least 20-30 mins. Cut the veggies in the meantime.

Make the tomato rice by heating up wok and adding in the oil. Sautee the garlic for 2 mins then add in tomato paste and stir for 1 min. Add in the rice and seasonings then stir for 5 mins until evenly coated.

Once beef is done marinating, mix in the cornstarch. Heat pan with oil then cook meat on all sides (let the beef get seared on each side).

Remove beef from heat then cook veggies in the same pan until they're softer.

Add back in the beef and 1 tbsp of butter. Shake them together on the pan for 2-3 mins.

Garnish and serve with the tomato rice!

My husband loves Mongolian beef. I found a recipe a couple years ago that was a knock off of PF Changs Mongolian beef. I didn't care for that recipe so I tweaked it and made it my own and came up with this. Needless to say, he said it was the best Mongolian beef he has ever had, no joke.
