  1. Japanese rice
  2. Salmon
  3. Mushroom (Enoki, Maitake, Shimegi etc)
  4. For Rice
  5. 1 tbspSoy sauce
  6. 1 tbspMirin
  7. 1 tbspDashi (liquid or powder)
  8. 1 tspSalt
  9. Chopped green onions (optional)

Cooking Instructions

    Rinse 1 cup of rice and add water according to your rice cooker’s line. Let it soak for 30 min.
    Season a piece of salmon with sake and salt, then let it rest for 10 min. If cooking 2 cups, double all seasonings.

    Add 1 tbsp each of soy sauce, sake, and mirin. Add 1 tsp of salt and 1 tbsp of dashi. Pat the salmon dry with a paper napkin before cooking.

    Place the salmon and enoki mushrooms on top of the rice.
    Start the rice cooker and cook as usual. (You can swap mushrooms for other vegetables you like!)

    Remove salmon skin and bones. Gently mix everything together.
    Taste and adjust seasoning if needed. Top with chopped green onions for optional.
