  • 2 cupsCarnaroli rice (about 320 grams)
  • 2 cupszucchini, to be cleaned (about 300 grams)
  • 3.5 ozspeck, cut into 1/8- to 1/6-inch thick slices (about 100 grams)
  • as neededChopped onion,
  • 4 1/4 cupsbroth (1 liter)

  • 1/4 cupgrated Parmesan cheese (about 30 grams)
  • as neededOlive oil,
  • 1/2 cupdry white wine (125 ml)

  • 1large skillet
  • 1wooden spoon
  • 1small pot for broth

    On a cutting board, trim any excess fat or tough parts from the speck slices, then cut them into small squares.

    Trim the ends off the zucchini, wash them, and cut into small pieces to help them cook evenly.

    In a large skillet, heat olive oil and sauté the chopped onion. Add the zucchini pieces and cook over medium-low heat for about 10 minutes, stirring often. Meanwhile, heat the vegetable broth if you have it prepared, or make it now using homemade bouillon (see recipe).

    Place a little more than half of the cooked zucchini in a blender and blend until smooth.

    Leave the remaining zucchini in the skillet and add the speck. Sauté for 5-6 minutes, then add the rice and toast it for a few minutes. Pour in the wine and let it evaporate.

    Immediately add enough hot broth to cover the rice. Cook over low heat so the liquid doesn't evaporate too quickly, adding more broth as needed until the rice is al dente.

    Stir in the blended zucchini, grated Parmesan, and adjust salt to taste. If you like, you can add black pepper and a pat of butter, but I left them out for a lighter version. Wait 5 minutes before serving. Plate and enjoy!
