Creamy zucchini and speck risotto is a dish with a rich yet delicate flavor, combining the freshness of zucchini with the savory, smoky taste of speck. The risotto starts with sautéed onion, then zucchini cut into rounds or cubes and speck sliced into strips are added for a smoky touch. On a cutting board, trim any excess fat or tough parts from the speck slices, then cut them into small squares.

Trim the ends off the zucchini, wash them, and cut into small pieces to help them cook evenly.

In a large skillet, heat olive oil and sauté the chopped onion. Add the zucchini pieces and cook over medium-low heat for about 10 minutes, stirring often. Meanwhile, heat the vegetable broth if you have it prepared, or make it now using homemade bouillon (see recipe).

Place a little more than half of the cooked zucchini in a blender and blend until smooth.

Leave the remaining zucchini in the skillet and add the speck. Sauté for 5-6 minutes, then add the rice and toast it for a few minutes. Pour in the wine and let it evaporate.

Immediately add enough hot broth to cover the rice. Cook over low heat so the liquid doesn't evaporate too quickly, adding more broth as needed until the rice is al dente.

Stir in the blended zucchini, grated Parmesan, and adjust salt to taste. If you like, you can add black pepper and a pat of butter, but I left them out for a lighter version. Wait 5 minutes before serving. Plate and enjoy!
