Plantains are larger and bigger than the usual bananas. This recipe, tostones, are made with green, unripe plantains. This twice fried green plantains are great on its own and they also pair well with any kind of savoury dips. You can serve them as finger food / hors doeuvres. Top them with any protein with some fresh chopped herbs, red onion, tomatoes and your preferred sauce.

Tostones

Ingredients

2-3 servings
  1. ✅️ TOSTONES
  2. 3GREEN, unripe, plantains
  3. 1 tbspsalt diluted in 2-3 glasses of water
  4. 1 CCooking oil for deep frying or as needed
  5. ✅️ SERVING SUGGESTIONS
  6. 1. Salsa
  7. 2. Mint Dip
  8. 3. Top with diced steak + finely chopped red onion + tomatoes + coriander/cilantro (see picture)
  9. 4. Mixture of mayonnaise, sweet chili sauce, 1 pinch of grated garlic and fine salt as needed

Cooking Instructions

  1. 1

    Cut both ends of the plantains, then remove the skins (see pic).

  2. 2

    Cut plantains into 1-inch slices. Soak plantains in a bowl of salt water for 10 mins. Next, remove plantains from the water. Pat them dry with clean kitchen towel.

  3. 3

    Over medium heat, add enough oil in a deep wok or skillet for deep frying. Before the oil get too hot, add plantains and fry until they are golden. Fry them in batches. Check the heat every now and then, making sure the oil is not too hot. Once all fried, turn the heat off.

  4. 4

    Next, GENTLY flatten each slice using any flat utensil. Avoid smashing them hard and abruptly as they will break. Next, reheat the oil again over medium heat. Return these flattened slices to the pan and fry them in batches for another 2 minutes or as needed until crispy.

  5. 5

    Remove from the heat and place on a paper towel to absorb excess oil (if any). Serve with your favorite sauce. See serving suggestions for ideas.
