Ingredients

  1. 1/4small cabbage, shredded
  2. 1medium carrot, shredded
  3. 2–3 scallions, finely chopped
  4. 3 tbspall-purpose flour
  5. 1egg (for mixing)
  6. 1egg per pancake (for the center)
  7. 1/4 tspsalt
  8. 1/4 tspblack pepper
  9. 2 tbspbutter (for frying)

Cooking Instructions

    In a bowl, combine cabbage, carrot, scallions, flour, 1 egg

    Add salt, and pepper. Mix well.

  3. 3

    Melt 1 tbsp butter in a skillet over medium low heat.Add a scoop of the veggie mix to the pan, form a nest.

    Crack an egg into the center.

  5. 5

    Cook 3–4 minutes until golden, then flip and cook 2–3 more minutes to set the egg white.Enjoy !
