  • 2eggplants
  • 1red bell pepper
  • 2onions
  • 3tomatoes
  • 3 tablespoonsolive oil
  • 2 tablespoonssalt
  • 1 teaspoonground black pepper

Steps

70 minutes
  1. 1

    Place the whole vegetables on a baking sheet and roast at 350°F (180°C) for 50 minutes.

  2. 2

    Let cool, then peel the skin off the vegetables.

    Chop the eggplants and tomatoes, and cut the pepper and onion into strips.

  4. 4

    Season with salt and pepper, mix well, and enjoy.
