Steamed banana cake is a moist and dense, yet fluffy, dessert that can be made without an oven. This method, popular in many Asian countries, results in a rich banana flavor and a unique, tender texture.
Steps
- 1
In a large bowl whisk sugar and eggs, till it becomes melting.
- 2
In a separate bowl, sift together the all-purpose flour, baking soda, and baking powder.
- 3
Add together the mashed bananas, oil, and your choice of flavor (Mocha or Vanilla extract) in the dry ingredients until well combined.
- 4
Gradually add the wet ingredients to the dry ingredients.
- 5
Gently fold the ingredients together using a spatula until just combined. Do not overmix as this can result in a tough cake. A few lumps of flour are acceptable.
- 6
Pour the batter into your prepared cake pan. Gently tap the pan on the counter a couple of times to release any large air bubbles.
- 7
Once the water in the steamer is boiling, carefully place the cake pan inside. Wrap the steamer lid with a clean kitchen towel or cloth to prevent condensation from dripping onto the cake, which can make it soggy.
- 8
Cover the steamer and steam the cake over medium heat for about 45 to 60 minutes.
Tips
The cake is done when a toothpick inserted into the center comes out clean.
