Potato Taquitos

I got this recipe from mexico, along with the salsa that goes well with it. You can use any kind of cooked meat as an alternative to potatoes. I have also used rotisserie chicken, or chicken cooked in broth.

Steps

Peal, chop and boil potatoes

Mash potatoes with egg and salt
- 3
Heat tortillas in microwave 1-2 min.
- 4
Roll potato mixture in tortillas
- 5
Heat oil in fry pan
- 6
Add taquitos to pan, fold side down.
- 7
Turn taquitos when golden on one side. Cook the other side
- 8
Move cooked taquitos to paper toweled container, vertically to allow oil to drain. Cover with paper towel to keep warm.

Add toppings and enjoy
