First, clean the beef heart by removing any connective tissue and finely chopping it. You'll end up with very lean, juicy ground meat. Place it in a baking dish and add 1 tablespoon of salt or 2 to 3 tablespoons of soy sauce.

Add the ketchup, dried garlic, and thyme. Mix well with your hands to combine everything thoroughly.

Spread the mixture evenly to cover the bottom of the dish. Drizzle olive oil on top and bake at 340°F (170°C) for about 25 minutes.

Because this cut is so juicy, it will shrink to about a third of its original size. Transfer the meat and its juices to a skillet.

Dissolve the cornstarch in a little cold water. When the juices start to boil, add the cornstarch mixture, stirring constantly.
