  1. 2 tablespoonsoil
  2. 1onion (finely chopped)
  3. 2 clovesgarlic (minced)
  4. 1 teaspoonginger (grated)
  5. 1 teaspoonturmeric powder
  6. 2 tablespoonsflour (for thickening)
  7. 1/2 teaspoonblack pepper
  8. 3 cupswater or light chicken broth
  9. Salt to taste
  10. Juice of 1 lemon

    For the Add-ins:
    2 large potatoes (boiled and cubed)

    Bhajias (potato or lentil fritters – see below)

    Cooked boiled eggs (halved)

    Crispy cassava chips or sev

    Chopped fresh coriander

    Mango chutney or tamarind sauce (optional)

    Chili sauce (to taste)

    Bhajia (Potato Fritters) – Optional but Traditional:
    1 cup gram flour (besan)

    1/2 teaspoon turmeric

    1/2 teaspoon cumin seeds

    Salt to taste

    Water (enough to make a thick batter)

    Sliced potatoes or cooked lentils

    Oil for frying

    Mix ingredients, coat potatoes or lentils, and deep-fry until golden. Set aside.

    Make the Soup Base:
    Heat oil in a pot. Sauté onions until soft, then add garlic and ginger. Stir in turmeric and black pepper.

    Thicken the Soup:
    In a small bowl, mix flour with a bit of water to make a smooth paste. Add to the pot and stir well.

  5. 5

    Simmer:
    Pour in water or broth. Simmer for 10–15 minutes until slightly thickened. Add salt and lemon juice. Adjust seasoning.

    Assemble Your Urojo Bowl:
    In a serving bowl, add a mix of boiled potatoes, bhajias, egg halves, and any toppings you like. Pour hot soup over everything.

    Garnish and Serve:
    Top with fresh coriander, crispy sev or cassava chips, chutney, and chili sauce.
