Potato cubes
My favorite go to when I'm hungry and want a quick lunch. I really like it because you can add anything you have in your fridge and adjust it to your taste.
Cooking Instructions
- 1
Peel and cut potatoes to cubes. Boil the potatoes, take them out of the water and put them in a pan. Fry the potatoes on one side.
- 2
While the potatoes are frying, cut the meat into cubes and cut onion/garlic/leek. I usually put beef or smoked pork, but you can put any type and quantity of meat or some vegetables. Same goes for the onion, garlic and leek.
- 3
When the potatoes are fried on one side, put the rest of the ingredients, salt and pepper to your liking and you can add any other spice.
- 4
Mix it well and fry for 5 minutes.

Special Potatoes Special Potatoes
My nephew dubbed these potatoes ‘special potatoes’ 30 years ago. Every time he came to my house, this is what he wanted with supper. I’m still making them. It came out of stewed potatoes. When I want something similar to the center of a baked potato, but don’t want to wait that long to bake it, I make these. Use a thin skinned potato that you don’t have to peel or peel your potatoes. It’s up to you! SherryRandall: The Leftover Chronicles -
