Lumpia goreng

Lumpia goreng is a simple Indonesian fried spring roll filled with vegetables and meat. The spring roll wrappers are filled with chopped, matchstick-sized carrots, shredded cabbage, and sometimes mushrooms. Although usually filled only with vegetables, the fried spring rolls might also be filled with minced chicken, chopped pork or prawns. I prefer to make them with pork, like my mother ❤️ did. But it is hard to get the taste of my mother in it. Her secret ingredient is the love for us children and my father❤️. When i make them i ask my family to come and eat all you can eat. They return my empty boxes and hopefully i fill them again with lumpia goreng.

Cook the meat twice. First through away the dirty cooked water. Add the second time 2 stock cubes to it. 10 minutes in total. After it is cold chop the chicken in small pieces or cut the pork in small slices. 1/4 cm.

Add the olive oil in a big pan. Add chopped shallots and garlic when the oil is hot. Mash the tofu. Add the carrots and tofu in the pan and mix. Add 2 mixed eggs and mix. Add a little water and close the pan for 3 minutes. Put off the heat and add salt, pepper, vetsin, sugar, soy sauce, oyster sauce and mix well. Add the chopped celery, spring onions and bean sprouts and mix it well.
