I made Potol Posto which is very flavourful and goes best with Kolai Dal and Steamed rice

I made Potol Posto which is very flavourful and goes best with Kolai Dal and Steamed rice
Steps

Soak Posto in water for 2 hrs and add to a shil & nora with 2-3 green chiliies to make a paste with little water

Wash the Potol and Potatoes, peel the skins and retain the skins of Potol for future use. Make a small insertion in the middle of Potol so that all ingredients reaches inside, cut the potatoes lengthwise like the shape of Potol

In a wok heat 2 Tbsp mustard oil and add the Potol and fry on medium flame covered for 8 mins, until a brown colour is visible, add 1/8 tsp salt and set aside.

In the same wok add rest of the mustard oil and add whole red chilli and nigella seeds, reduce the flame and add potatoes and fry for 5 mins

Add Posto and mix well, add turmeric powder and salt and mix well. Add 1/2 cup water and mix well

Add the fried Potol and water if needed, cover to cook for 5 mins

The consistency would be dry and add green chiliies and garnish with mustard oil, cover and set aside

Plate with steamed rice and Kolai Dal and enjoy a delicacy from Bengal

Tip - Soak cut potatoes in water to avoid black marks. When peeling Pointed gourd, add the peels in a air tight container for future use as Potol cooked with peels will darken the mustard oil
