Wash and cut all the vegetables

Add the vegetables to a blender with the olive oil, red wine vinegar, and salt

Blend it until completly smooth

Serve it cold in a bowl or glass. Top it with chopped vegetables (cucumber, tomatoes, onions), croutons and olive oil.
