Place the egg whites in a bowl and beat them until they become frothy.

Add the Greek yogurt and mix.

Add the sifted flour and mix again.

Add the brown sugar and baking powder, then blend everything together very well.

Pour a teaspoon of oil into a skillet and use a paper towel to spread it evenly over the bottom. Heat the oil, then use a ladle to pour in some of the batter. Cook until bubbles start to form on the surface. Flip the pancake with a spatula and cook the other side for a couple of minutes. Transfer to a serving plate.

Repeat the process until all the batter is used. You should get about 6 pancakes. Dust with powdered sugar, add a little Nutella and some chopped pistachios. Serve and enjoy!
