Seaweed soup (Korean birthday soup)

Seaweed soup is Korean soul food, It’s traditionally eaten and birthdays and given to women after they have just given birth. It’s a symbol of health and it’s so delicious and heartwarming, if you’re looking for a new way to use seaweed in the kitchen try making this seaweed soup!!!

First soak your dried seaweed into hot water for about 10 minutes, then roughly chop the seaweed into pieces and with kitchen scissors. While that is soaking also thinly slice your beef.

Next stir fry the beef on high heat with the soy sauce, sugar and sesame oil until browned. Then add the seaweed, minced garlic and onion and stir fry for another 5 minutes or so

Next add in beef bone broth tablets, beef bouillon, MSG, ramen soup base, etc. I have some of the photos of the seasoning products I used pictured below

Next add approximately 10 cups of water to the pot and allow it to simmer for about two hours or until the beef is tender. Once the beef is tender check for the broth and adjust to taste for saltiness. If it needs more saltiness you can add more beef bouillon or if it’s too salty after reducing add more water! Lastly at this point you can add some perilla seed powder to the soup this is how my family enjoys this soup but it’s completely optional.

Now after adjusting the saltiness to your personal taste, serve the soup with some fresh rice and kimchi. I personally like to drizzle my soup with some extra sesame oil too!
