Soya chunks Aloo Posto

First soak the khus-khus in little water for about an hour. Now add this into a grinding jar, add a piece of onion and a green chilli too, add some salt and grind them into a smooth, fine paste. Now keep this khus-khus mixture aside.

Now soak the soya chunks in hot water for about 2 hours. Then drain out the excess water by squeezing the soya chunks. Now keep them aside. Cut the boiled potato into pieces and add them too as shown below.

Now add some oil in a pan. When the oil becomes hot add the potato and soya chunks to it. Sprinkle some salt and shallow-fry them for about 2 to 3 minutes. Now keep this aside.

Now in the same pan, again add 4 tbsp of mustard oil. When the oil gets hot, add kalounji, bay leaf, dried red chilli. Let them splutter a while then add chopped tomatoes to it.

Let the tomato pieces become tender then add grated/chopped onion, slit green chillies. Sprinkle some salt and mix everything well. Now fry the masala until the tomato pieces becomes tender and the onion becomes translucent in colour.

Now add the fried potatoes and soya chunks in it. Mix it well with the masala. Let everything fry for about 5 minutes.

Then add the khus-khus I.e. posto mixture in it. Combine everything well. Again let it cook for about 5 minutes on low flame.

Then add half a cup of lukewarm water, add some salt and sugar and mix everything well as shown below. Cover the pan and let it cook for about 5 to 7 minutes on a low flame.

Once the gravy thickens, switch off the flame. Finally add some mustard oil on top of it. Give it a mix and serve this with piping hot steamed rice. It is healthy yet delicious with very minimal oil and spices. It's an authentic Bengali delicacy.
