Cilantro and Olive Oil Marinade for Any Protein

This is a very simple marinade, and the secret is in the olive oil you use—the better the oil, the better the flavor. I used organic extra virgin olive oil, which gives it a delicious taste and aroma. You can use this marinade with beef, chicken, fish, seafood—whatever you like. The only thing that changes is the marinating time: for fish and seafood, marinate for 20 to 30 minutes; for beef and chicken, up to 2 hours.

Ingredients

  • 1/2 cuppacked cilantro leaves (about 15 grams)
  • 1/4 cupextra virgin olive oil (about 60 ml)
  • 1small garlic clove
  • Juice of 1 lemon
  • 1/2 teaspoonsalt
  • 1/2 teaspooncrushed red pepper flakes (or to taste)
  • 1/4 teaspoonground black pepper
  • Pinchground cumin

    Prepare the ingredients. Use high-quality extra virgin olive oil for the best flavor. For the cilantro, use only the leaves, not the stems, as stems can make the marinade bitter. Place all the ingredients in a blender or food processor.

    Blend or process until everything is well combined. The marinade is ready to use. Pour it into a jar or bowl. If you don't use it all, you can freeze the leftovers for future use.
