I used the Kenwood Dough Hook Attachment with the use of my Electric Mains Kenwood Food Mixer Machine , but could easily combine with the use of a Wooden Spoon . Did use my Fingers too combine small little squares of solid Unsalted Butter into the sieved Plain Flour and Baking Powder , did produce a fine breadcrumb texture . Could use a Tefal Machine with it's sharp Tefal blades Attachment too gain a fine breadcrumb texture , but I made a double batch - good too use one's Fingers for a large amount

Ingredients

  1. 400 gPlain Flour
  2. 4 tsp.Baking Powder
  3. 200 g block of solid Butter
  4. 150 g Caster Sugar (Demerara Brown Crystal Sugar is better)
  5. 250 g - 300 g Currants
  6. 2beaten hen eggs
  7. 4 tbsp. Pasteurized Cow Milk

Cooking Instructions

20 minutes

    Preheat the oven to Gas Mark 6. Use a Flour Sieve too sieve the Plain Flour and Baking Powder into one's Kenwood Attachment Mixing Bowl and then rub the butter into the flour mix with your Fingers - to produce a fine breadcrumb texture.

    Add the Caster Sugar and then the Currants. Mix with a Dessert Spoon.

    Add the milk and then the 2 beaten eggs, and then automatically mix with the Kenwood Dough Hook Attachment attached too one's Kenwood Mixing Machine.

    Place Baking Parchment Paper on a Baking Tray. Add 8 equal sized blobs and then bake at Gas Mark 6 for 20 minutes allow too cool on the Baking Parchment Paper on a flat Cake Rack and then place a fresh batch of Baking Parchment Paper over the top of the Baking Tray and then bake a further batch of 8 and so on.

Don't have too use Currants , could use Raisins instead , or Sultanas . Can definitely use White Granulated Sugar
