Start by washing the vegetables and cutting them in small cubes

In a medium to large pan add olive oil with the garlic, onions, and peppers first. Sauté for 5-7 minutes in medium-low heat or until the vegetables look cooked

Add the rest of ingredients and let it cook another 5-7 minutes until all the vegetables look cooked.

Add the tomato sauce along with salt to taste, a pinch black pepper, and a dash of sweet paprika. Mix well and let it cook/reduce in low heat for about 15 minutes to combine all the flavors.

Serve warm with bread or potatoes. You can also use it as stuffing for empanadas, it’s delicious! Optional for added protein: top it with a fried egg or white beans
